Shiitake

LENTINULA EDODES

Description/Flavor: A meaty texture and earthy flavor, excellent source of Umami, perfect addition to soups, salads, meat dishes and stir fries. Also great grilled, roasted, and deep-fried.

Known as a symbol of longevity in Asia, shiitakes have been used for over 6,000 years as medicine. Health benefits include fighting cancer cells and infectious disease, boosting the immune system, and more.

Pearl Oyster 

PLEUROTUS OSTREATUS

Description/Flavor: An excellent, delicate and pleasant crunchy texture with mild flavor, it's versatile and great in any dishes where you would normally use mushrooms, such as pasta dishes, soups, sauté, stews. 

Studies show all oyster mushrooms have health benefits such as Lowering cholesterol, regulate blood pressure, and more.

Pink Oyster 

PLEUROTUS DJAMOR

 

Description/Flavor: Native to Indonesia, this bright pink mushrooms has a mild flavor with a pungent savory aroma. They can be sautéed with other vegetables or added to pasta dishes or soups, compliment white sauces and risotto dishes.

Lion's Mane

HERICIUM ERINACEUS 

 

Description/Flavor: This powerful mushroom is now being recognized for it's unique properties on neuroprotection and nerve growth factor, which would be helpful on managing neurodegenerative diseases such as Alzheimer’s disease, dementia, Parkinson’s disease, and other neurological problems. Mild and sweet flavor with tender texture, it's great sautéed or in sauces and soups.

Description/Flavor: Delicate, thin flesh, and pleasant light texture with mild flavor, Great for any dishes, such as pasta sauces, soups, sauté, marinade. 

King Trumpet

PLEUROTUS ERYNGII  

 

Description/Flavor: A meaty, tender, texture with a mild and elegant flavor. When caramelized, it develops umami flavors with a texture similar to that of scallops. Great meat substitute, also complements meat, fish, and pasta dishes. A thick flesh makes it perfect for grilling, roasting, and deep-frying.

Blue Oyster

PLEUROTUS OSTREATUS VAR. COLUMBINUS  

 

Description/Flavor: It produces beautiful, dark blue mushrooms that lighten in color as they mature. A soft, delicate and pleasant crunchy texture with mild flavor, it's versatile and great in any dishes where you would normally use mushrooms, such as pasta dishes, soups, sauté, stews. 

Abalone Mushroom

PLEUROTUS CYSTIDIOSUS 

 

Description/Flavor: Crisp, white, dense and meaty with an earthy, buttery flavor with notes of nuts and a velvety texture when cooked. Pair it with seafood, pork, garlic, ginger, soy, herbs and vegetables. Also great grilled, roasted, and deep-fried.
